Dr. Peter Schlumbohm refined brewing into a science balancing filtration and extraction to achieve clarity in the cup.

As Dr. Peter Schlumbohm explains:

Perfect Extraction and Perfect Filtration

“The filter paper must have a carefully selected grain and a sufficiently large area. A folded filter paper cone arranges the small quantity of coffee grounds for advantageously in a deeper layer than obtained by spreading the grounds over the total area of a horizontly-placed filter paper.”

DR. PETER SCHLUMBOHM

Identified all of the components that ground coffee contains, and declared that there were only two desirable elements that one should have in their cup after the brewing process.
